What inspires Dao.traveller's Ballet Salmon? : Late summer leisure time besides Amsterdam’s canals!
This September Dao.traveller traveled to Amsterdam again. The weather was pleasantly warm and sunny, which was a nice surprise for this time of year. People were in shorts and T-shirts, enjoying the breeze while riding their bikes.
I headed from Amsterdam central to a neighbourhood in West, passing by a small park besides a canal. People were sunbathing in the park, relaxing in their swimsuit on blankets brought from home. There were people laughing together, jumping into the water, reading book and enjoying a walk with their dogs. And I thought…what an amazing scenario illustrating the vibrant atmosphere of a sunny day!
With my mind swimming with the people in the canal, I couldn't help but wander if the under-water creatures were enjoying the summer day like the people above!
隨著思緒飄移，我的腦海中響起詩篇 8:3這段讚頌大自然的話語：我觀看你指頭所造的天，並所陳設的月亮星宿。我看著盤旋在空中的飛鳥，藍色舞台裏洄遊淡水海水間，跳著優美旋律的圓舞曲！想像著水中的魚，遇上風浪不懼怕的展現天賦跳出水面，攀到瀑布上游！大自然的生物如此完美精湛的演出，含著淚稱謝頌讚我們的 –萬物生命創造主。
While I was imaging the scenario in the water with all kinds of creatures, a verse worshipping the amazing design of our natural from Psalm 8:3 popped in my thoughts: “I consider your (God) heavens, the work of your fingers, the moon and the stars, which you have set in place”. I raised my head and looked at the birds in the blue sky and looked down at the animals that swim in the deep blue water. They are natural performers, dancing ballet elegantly on a blue stage. I could not get their dance out of my head: I pictured the fish jumping fearlessly above the water out of the stormy waves and swimming against the stream with all its strengths. The dances were so marvellous that I could not help but be in awe of the majesty of the creator of this world, God.
旅程結束，我回到稻旅人，開始嘗試用各式各樣食材訴說我今天的旅程，一番嘗試後，我設計了『 芭蕾 。鮭魚 』這道料理，這是一齣由大自然演出的芭蕾，由鮭魚、手工荷蘭醬以及新鮮迷迭香為主軸。在水中翩翩起舞的鮭魚是這齣芭蕾舞的主角，荷蘭醬所畫的圓，是鮭魚的優美迴旋舞步；新鮮迷迭香氣，甜中帶著微苦，表達著優美夏日的氣味。其他的新鮮蔬菜與各式辛香料，如同伴舞者，恰如其分的伴隨著主旋律，呈現優美的夏日水中舞蹈盛會。
After the journey I went back to Dao.traveller to recreate today’s experience, using ingredients to reflect the moment. After an afternoon of experimentation, the right flavours came together creating the dish ‘Ballet Salmon’. Ballet Salmon is a dance and performance of nature. The main elements are a salmon, fresh rosemary and handmade Hollandaise sauce. Salmon is the main character in the dance while the circular shape of hollandaise sauce represents the Fouetté. The invigorating and sweet smell of fresh rosemary infuses the dish with the atmosphere of a warm, summer day. The remaining dancers - the fresh vegetables and herbs - join the plate to complete the ballet. The ingredients combine to recreate this great summer dance.
